Loach is a type of slender freshwater fish. Because of its frequent sightings at muddy surfaces, loaches have an earthy taste and this is why not many people order loaches. However, Claypot Loach is a different matter altogether. The owner marinates fresh loach with fermented bean curd, hua diao wine, assam peel, soy sauce till flavourful and deep fries it till crispy.
